Resurrection Cake

Our bodies are gifts to us, temples of the Holy Spirit. God desires for us to eat clean, healthy foods that nourish and strengthen our bodies so that we can avoid unnecessary disease and fulfill His will and purposes.

After filling up on our daily Bread (John 6:35), my original Resurrection Cake might be a blessing to you. It’s a good-for-you flourless dark chocolate cake/fudge with many variations in preparation, all of which are healthy and healing for your body. Whether you have gone Paleo or are simply trying to incorporate more good fats into your daily diet, this concoction will do your body good.

Ingredients

12-16 oz. organic 72-85% dark chocolate

1 cup Kerry Gold butter (salted or unsalted)

1 cup coconut oil

3/4 cup Xylitol or equivalent Stevia drops

6 cage free eggs

1-2 t. vanilla

1/3 cup cocoa powder

1 cup ground flax seed

1 cup hemp seed

Instructions

Melt together and stir over double boiler: chocolate, butter and coconut oil.

Remove from heat. Add Xylitol/Stevia. Cool until just warm/room temperature. Add eggs, one at a time. Make sure no bits of shells fall in.

Coat baking dish with coconut oil and pour in batter. Use 9×13 dish for flatter cake, 8×10 for taller cake.

Bake in preheated 350 degree oven for 25-30 minutes (convection oven). Let cool and cut. Store covered in fridge.

(If you cannot use grass-fed butter, omit the butter ingredient.)

Enjoy as a breakfast, in lieu of your coffee, for lunch or as a snack or dessert.

Caution– eating this cake too close to bedtime may inhibit restful sleep.
